Why are my boys so happy you ask???Well, I guess I should start from the first. This last Saturday my mom went to Provo with a friend and while they were there they went to a farmer's market and found many delisious fruits....my favorite! My mom bought a bunch and ended up bringing some home for us and you would not believe how yummy they are. She brought home some watermellon but best of all, many many strawberries. Get this they were only 99 cents per 1 lb container! amazing! She brought me home a whole box which is 8 - 1 lb containers and so I had to think of what I was going to do with them all. There was no way that we could eat them all before they went bad.
So, I called Grandma Shirley and got her recipe for freezer jam. Jaron's favorite!
I could not believe how incredibly easy it was to make. We will definately have this on hand more often now.
So for those of you who have never made freezer jam before (like me) I'm just going to give you a quick run down.
Get your Strawberries, (1 quart for one box of pectin.)
Wash and hull them.
Mix in your food processor until to desired consistency. (not too pureed but not too chunky either)I had to borrow my mom's food processor because I still have yet to buy one. I think I'm definately going to need one now!

Mix in 4 cups of sugar with your mashed berries. Let set for ten minutes so the surgar can disolve with the natural sugars in the berries.

When it gets close to the end of your ten minutes mix 3/4 cups water with 1box of pectin and bring to a boil for one minute.(stir constantly) Then add to the strawberry- sugar mixture and stir for 3 minutes to dissolve sugar further.
Once your three minutes has passed, pour into desired freezer containers and let set for 24 hours at room temperature. After 24 hours, freeze for up to 1 year or refrigerate for up to 3 weeks!!I made six boxes of strawberries which made 3 boxes of pectin mixture and ended up with 8 containers of Jam.
It only took me an hour to make three batches of Jam wich made the 8 containers....fast and easy!!
It's definately safe to say that strawberry freezer jam is Jaron's favorite and lets just say that anything that has fruit in it is Jager's favorite. ( he's my litte fruit lover) He has had strawberries for snacks and breakfast and asks for more after he has finished his helping. He loves it!

hey!! i know what farmers market ur mom went to we go there like 3 times a week, its so cool up there and the prices are great, its called sunflower, we got 2 flats of strawberries to dip in chocolate for my birthday party on saturday, it was pretty awsome! freezer jam is great!!! see you guys sometime soon, dunno when i will bw in Rich again but ya!
